Soba Scallop Bowl Recipe

Soba Scallop is a Japanese staple. ⁠

This delicious and healthy dish is popular in the wintertime but you can prepare it anytime you feel like it. ⁠

Take some time this week to make it and let us know how it goes. 


2 bundles of soba noodles

2 tsp dashi of instant (hon-dashi) or 3 cups of homemade

4 tsp soy sauce

4 tsp mirin

2 tsp sake

½ tsp grated fresh ginger

¼ cup of green onion sliced

A handful of fresh shitake mushrooms sliced

Big pinch of shredded nori (seaweed) or small cut piece of nori

2 tsp of grated daikon (white radish)

4 large scallops grilled


Step 1: Put scallops in a small bowl, and add a little soy sauce and sake. Cover and refrigerate

Step 2: Start your broth by boiling 3 cups of water adding hon-dashi or bringing homemade dashi to a boil. Add soy sauce, mirin, sake, and ginger. Add the shitake mushrooms. Boil for 2 minutes.

Step 3: Make your noodles

Step 4: Using an outside grill or a grill pan (my favorite), grill your scallops for about 4-6 minutes on each side

Step 5: Now it’s time to layer! pour broth over noodles, then add toppings
